چکیده

Abstract Casein as the major protein of milk is a promising source for biopolymer fibers. Current casein-based fibers are fabricated by dissolving caseins in alkaline media and wet spinning coagulation bath containing harsh chemicals. In milk, casein present so-called micelles (CMs). Based on rennet-induced aggregation, we developed process that can be applied micellar sustainable way without use Fabricated show surface with characteristic microstructure, which also detected embedded network structure inside fiber. The stable under acidic neutral conditions decompose down to aggregates sizes comparable microstructure. so far reached tensile properties fiber between low mid double-digit percentage range compared azlons.

Casein micelles: size distribution in milks from individual cows.

The size distribution and protein composition of casein micelles in the milk of Holstein-Friesian cows was determined as a function of stage and number of lactations. Protein composition did not vary significantly between the milks of different cows or as a function of lactation stage. Differences in the size and polydispersity of the casein micelles were observed between the milks of different...

Casein phosphopeptides from casein micelles by successive digestion with pepsin and trypsin.

When milk is ingested, casein micelles will be successively digested by pepsin in the stomach and trypsin in the intestine. Therefore, we digested casein micelles successively with pepsin at pH 4.0 and trypsin at pH 7.0, and recovered casein phosphopeptides (CPP) as CPP-calcium phosphate (CP) complexes. The CPP-CP complexes contained 248 mg of calcium/g peptides and 175 mg of inorganic phosphor...

Casein micelles and their internal structure.

The internal structure of casein micelles was studied by calculating the small-angle neutron and X-ray scattering and static light scattering spectrum (SANS, SAXS, SLS) as a function of the scattering contrast and composition. We predicted experimental SANS, SAXS, SLS spectra self consistently using independently determined parameters for composition size, polydispersity, density and voluminosi...

Stability of casein micelles in milk

Casein micelles in milk are proteinaceous colloidal particles and are essential for the production of flocculated and gelled products such as yogurt, cheese, and ice-cream. The colloidal stability of casein micelles is described here by a calculation of the pair potential, containing the essential contributions of brush repulsion, electrostatic repulsion, and van der Waals attraction. The param...

Cooling effects on a model rennet casein gel system: part II. Permeability and microscopy.

Microscopy and permeability studies were performed to further illustrate the cooling effects on rennet casein gel structure and help interpret the rheological observations in the first part of this paper. Samples of gels cooled from 80 to 5 degrees C at four rates (0.5, 0.1, 0.05, and 0.025 degrees C/min) were studied with a confocal laser scanning microscope. A larger number of smaller flocs w...
